Blue Grenadier (Hoki)

Blue Grenadier (Macruronus novaezeladiae) are caught along the continental slopes of western Bass Strait and western Tasmania – some of the purest and wildest ocean waters of the world. The delicate, white, moist flesh is suitable for most methods of cooking, as the fillet flakes very easily and is truly succulent. The fillet is of long shape and rather slender, tapering slightly.
At Petuna we market our Blue Grenadier as fresh fillet, frozen fillet and fish fillet blocks. We also offer smoked Blue Grenadier from our Devonport smoke house – a true gourmet delicacy. Our Blue Grenadier catch varies in size from 1–3.5kg.
